Peppermint chocolate slice [bonus: it can be gluten free!]
After so many people loved my recipe for easy chocolate coconut slice that I have been cooking for years (seriously it’s so easy – you can be eating it in less than half an hour if you are impatient, and hungry!!) and since I now have some fabulous essential oils that are food grade in my home, I decided I needed to experiment with the original recipe a little more.
Could I make it peppermint! Peppermint chocolate slice!
The base of the slice is just perfect as it was, but the icing needed something a bit special. I decided to try and incorporate more coconut into the icing (there can never be too much coconut!) and make it almost like a coconut rough icing. I have vague memories of a similar slice when I was a kid, and I really wanted to perfect it.
After many attempts, lots of taste testing and sharing with friends so they can let us know what they think – Liana and I are confident this is pretty darn good, and that you will love it too!

Easy peppermint chocolate slice recipe
chocolate and coconut slice base
2 tablespoons cocoa or cacao powder.
1/2 cup brown sugar or coconut sugar.
1 cup coconut. * I like to use half dessicated and half shredded for texture.
150g butter, melted.
1 cup flour. * You can use plain flour if you like. For gluten free I like to use: 1/4 cup coconut flour, 1/4 cup buckwheat flour, 1/2 cup gluten free mix. It is also perfect with 1 cup buckwheat flour but is a little more crisp. (Please note don’t use any more than 1/4 cup coconut flour without adjusting the liquid content)
Preheat oven to 18o degrees Celcius.
Place dry ingredients in a bowl and stir to combine. Add melted butter and lightly beaten egg and mix until just combined.
Press into a square tin lined with baking paper and bake for 15-20 minutes until golden brown and set..
coconut rough + peppermint icing
1 tbsp butter, melted (approx 25g)
3/4 cup icing sugar.
1/2 cup coconut.
1 tbsp cacao powder.
1 tbsp hot water. (plus extra if needed)
3-5 drops food grade peppermint essential oil * Mix the peppermint essential oil in well and then taste test. (*Please note: food grade essential oil is different to peppermint essence and much stronger flavour. Please be sure of the quality of the product you are using, that it is safe for internal use and drop on to a teaspoon first if you are wanting to flavour to taste just so you don’t accidentally add too much! We use doTERRA essential oils.)
Mix icing ingredients together well, adding a little extra hot water if needed to get to the right consistency.
Once the slice has completely cooled, spread with the icing, sprinkle with coconut and refrigerate till set.
